Leon, Gto., Mexico, Nov. 29 (Notimex).- With the objective of strengthening the artisan elaboration of cajeta (soft milk candy) nationwide, one of Celaya’s most emblematic traditions, the First Cajeta Festival will be held there on December 9 and 10.
The director of Tourism Products of the state Ministry of Tourism, Rogelio Martinez Caballero, headed the press conference that was held at the Madero station of the municipality of Leon.
In his message, he remarked that the festival has consolidated after two years of work with the Association and Tourism Council of Celaya, in which the intention is to strengthen the sense of belonging and influence through gastronomy, where the attendance of 2,000 people from Guanajuato and neighboring states is expected.
“Cajetes made from Wood is an identity resource that we are trying to rescue because it forms part of the cajeta tradition, to talk about cajeta anywhere in the country is to talk about Celaya”, he said.
Cajeta is the unifying thread of a great gastronomic expression that identifies us as Guanajuato people, we are also working in a cheese and cajeta circuit in collaboration with Apaseo, Celaya and Queretaro to regionalize the product”, Martinez Caballero assured.
In this first festival that will be held from 0:00 to 22:00 at the Main Garden of the Historical Center, 12 cajeta makers that form part of the association will participate, selling cajeta flavors such as: wine, natural, burnt, nuts, strawberry, pine nut, eggnog, coffee, tequila and agave.
They are also selling derived products with the participation of 25 producers and artisans who will exhibit and sell their products, with guest artisans from Oaxaca, Tlaxcala and Guadalajara.
As part of the activity schedule there is the exhibition of cajeta elaboration, children’s activities such as “My little chef”, filling of pots with 2.5 meters, cardboard making workshop “Paint your goat” and a gastronomical zone.
There will also be a goat milk ice cream workshop, demonstration of products branded “Guanajuato”, earthenware pot elaboration workshop, photo exhibition of cajeta; accompanied by an artistic and cultural program.
The Association of Cajeta Producers from Celaya is soon receiving the Collective Trademark by the Mexican Institute of Industrial Property, which represents a decree as a gastronomical heritage of Celaya, which gives identity and recognition of these product made from goat milk, getting a better positioning in the market.
There are 30 cajeta producing companies in Celaya that generate 180 direct jobs and 250 eventual jobs with the elaboration of over 200 tons of cajeta every year.
